Pumpkin Chocolate Chip Cookies Recipe

I am not a good cook, and some days I really loathe even making dinner. I came to the revaluation last night that it has nothing to do with cooking, but the clean up after the fact.

Well if there is one thing I am good at in the kitchen, it is baking. I promise!

The fall is my favorite time of the year to bake, simply because of pumpkin stuff. I never really was a pumpkin fan until I met my husband, who can sit down and eat an entire pumpkin pie in one sitting.

I came across this recipe probably over three years ago... I think?  And it has stuck with me every season since.  Because of course the cookies are so delicious!


Get into your kitchen and gather up:


  • 1 Cup (2 sticks) softened butter
  • 1 Cup white sugar
  • 1 Cup light brown sugar
  • 2 Eggs
  • 1 Teaspoon vanilla
  • 1 Cup pumpkin puree (I always use one full can)
  • 3 Cups flour
  • 2 Teaspoons baking soda
  • 1/2 Teaspoon salt
  • 1 Teaspoon cinnamon
  • 1/2 Teaspoon Nutmeg
  • 2 Cups Chocolate Chips
YUM right?   I mean, with a side of heart attack from the two sticks of butter. Make sure you remember all the ingredients. I have made it a few times here and there minus a ingredient or two, and it just isn't the same... or as good!   One time I actually forgot the eggs... ick!   True story!

Start by pre-heating your oven to 350 Degrees so it can heat up while you are preparing everything else.
(You will bake them for about 17 minutes)



I always mix all of the liquid ingredients together after softening the butter, and then slowly pour in the dry ingredients as I mix. 


Once you have everything you need in there... mix.  If you are using a hand mixer, or mixing by hand I suggest starting to mix everything together before you add all of the dry type ingredients in to help with the mixing process. 


Once you have all of those ingredients mixed, you want to measure out your chocolate chips and mix them in as your last step. This is always my favorite part, because the chocolate chips are really what makes these cookies!


Two full cups of chocolate goodness. I think I always put extra in because I just love what the chocolate chips add to the cookies. One time I put an entire large bag in... I think it was upwards of four cups. Far more chocolate chips than actual pumpkin. HA!



Don't they just look delicious before they are even baked?  Just don't lick the bowl! 


Then comes spacing them onto the cookie sheets... leave them just enough room to plump down, but not too much room or you are going to be making 30 sheets of cookies.  The cookies will almost keep their form on the cookie sheets when they are baking...

You can see that with the final product!


While they don't look like they are fully cooked, they are... After roughly 17 minutes in the oven.


YUMMO!   They really are that good, I promise!
